After getting a chocolate chip cookie recipe I was happy with, chocolate cookies seemed like the next logical step. I looked at a brownie recipe from Cooking with Coconut Flour and approximated some things, and came up with something halfway between a cookie and a brownie. I used Hershey’s Special Dark Cocoa for the cookies in the photo (which is a relatively recent discovery for me but something I immediately fell in love with), but regular cocoa powder works just fine.
Because of the cocoa powder you tend to get a bit more out of this recipe than the chocolate chip cookies.
Low Carb Chocolate Cookies
Ingredients
- ⅓ cup coconut flour
- 2 T almond flour
- ½ cup cocoa powder
- 3 T erythritol
- stevia equivalent to ½ cup sugar
- low-sugar chocolate chips to taste
- ¼ tsp xanthan gum
- ¼ tsp baking soda
- dash salt
- cookie spices to taste (cinnamon, ginger, allspice, clove, nutmeg)
- ¼ cup coconut oil or butter, melted
- ¼ cup coconut milk
- 2-3 T applesauce (optional)
- 1 egg
Instructions
- Preheat the oven to 300°F.
- Mix together the dry ingredients.
- Mix in the coconut oil or butter.
- Add the coconut milk and applesauce (if cold the dough will get very stiff at this point as the coconut oil starts to solidify; I often mix by hand here).
- Mix in the egg.
- Now it's time to form the cookies. Keep in mind that these don't spread the way regular cookies do, so however they go into the oven is how they're going to come out. I usually form a handful of the dough at a time into logs and slice cookies from that, about 3/4" thick.
- Arrange on a silicone sheet or parchment paper and bake at 300°F for 20 minutes or until browned.
