Fried Sardine Cakes Doughnut Hole Recipe Mashup

This recipe for grain-free sardine fish cakes from Ditch the Wheat is currently my favorite way to eat sardines.  They’re just fishy enough without overwhelming you with the sardine taste.  The only problem is they tend to fall apart—especially when you’re trying to flip them to brown the second side.

Enter coconut flour fried doughnuts from All Day I Dream About Food.

Her trick to the doughnuts is to bake them first before putting them in the oil.  Being pre-baked helps the dough hold together.  I figured if it worked for the doughnuts, it was worth a try for the sardine cakes.

And it worked like a charm!

Because I was deep frying instead of pan frying I made them meatball (doughnut hole) style instead of patties.  I baked them in the toaster oven for about 20 minutes, then dropped them into a pot of tallow over medium heat.  They fried up beautifully, and held together well enough that we could eat them with our fingers.
